  • 24 Kalamata olives (4 ounces)
  • 4 large basil leaves, stacked, cut in thin strips
  • 1/3 cup reserved soybeans (from Soybean Pancakes)
  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon lemon juice
  • Salt
  • Freshly ground pepper

Step 11.Toss together the olives, basil, soybeans, oil, lemon juice and salt and pepper to taste in a small bowl. Taste and adjust the seasoning. (This recipe can be made ahead to this point and kept a few hours at room temperature.)

Each serving:
68 calories; 218 mg sodium; 0 cholesterol; 4 grams fat; 5 grams carbohydrates; 4 grams protein; 2.25 grams fiber.
