  • 1 tablespoon butter
  • 1/4 cup chopped red onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 1 cup rice
  • 1 cup vegetable or chicken broth
  • 1 cup water

Step 1Melt butter in medium saucepan over medium-high heat. Add onion, green and red peppers and cook, stirring until slightly softened, about 3 to 4 minutes. Add rice, broth and water. Bring to boil, then reduce heat to low, cover and simmer until liquid is absorbed and rice is tender, about 15 minutes.

Each serving:
210 calories; 226 mg sodium; 8 mg cholesterol; 3 grams fat; 39 grams carbohydrates; 5 grams protein; 0.26 gram fiber.
