- 2 cucumbers, peeled and cut into 1/2-inch thick slices
- 1/4 cup flour
- 3 tablespoons butter
- Freshly ground pepper
Step 1Pat cucumber slices dry with paper towel. Dredge them in flour.
Step 2Heat 1 1/2 tablespoons butter in skillet over medium heat and fry 1/2 cucumber slices until brown, 2 minutes per side. Remove from pan and drain on paper towels. Add rest of butter to pan and fry remaining slices, then drain.
Each of 6 servings:
