Total time: 1 hour | Serves 8
  • 1/2 to 3/4 pound ground beef
  • 1 onion, sliced
  • 2 cups chicken or beef broth
  • 3 cups tomato juice
  • 1 (11-ounce) can cream of tomato soup
  • 1 teaspoon garlic powder
  • 1 teaspoon sugar
  • 5 to 6 cups shredded or diced cabbage
  • Salt, pepper

Step 1Saute ground beef in large pot over medium-high heat until browned, 5 minutes. Add onion and cook until translucent, 5 minutes. Add broth, tomato juice, tomato soup, garlic powder, sugar, cabbage and salt and pepper to taste. Bring to a boil. Cover and simmer until cabbage is very tender, about 20 to 30 minutes.

Each serving:
121 calories; 716 mg sodium; 16 mg cholesterol; 5 grams fat; 12 grams carbohydrates; 7 grams protein; 0.83 gram fiber.
