Note: Adapted from Mr. C Beverly Hills. To make mandarin puree, peel the fruit and puree in a food processor, sweetening as desired with sugar; press the puree through a sieve, discarding the solids.
  • 2 ounces mandarin puree
  • 1 1/2 ounces vodka, preferably Yacht Club
  • 2 1/2 ounces Prosecco, preferably Cipriani
  • 1/2 ounce lemon juice

Step 1In a cocktail shaker, combine the puree, vodka, Prosecco and lemon juice with ice. Shake lightly and pour into a rocks glass or strain into a flute. Top with more Prosecco to make it extra bubbly for the summer.
