Looking for a break? School’s out in Glendale at Recess Eatery, where Patina alum (and former chef for Adam Sandler) Sevan Azarian is serving up clean, classic fare for breakfast, lunch and dinner. The restaurant’s cocktail list is in keeping with that vibe. Take a drink called Recess Thyme, which employs tequila to no-nonsense effect by mixing it with lemonade, fresh berries and lemon-lime soda. Homemade thyme syrup adds depth and serves as a lovely garnish. It’s a light refresher, to be sure. Great for summer by the pool but equally effective on a sunny fall afternoon in Southern California.

In a shaker, combine the lemonade, tequila, muddled berries and thyme syrup. Pour into an ice-filled glass and top with the soda. Garnish with the fresh thyme sprig and a skewer threaded with the berries and orange (1 blueberry, 1 strawberry, the orange slice, another strawberry and the last blueberry) placed over the rim of the glass. Serve immediately.

To make the thyme simple syrup, combine equal parts sugar and water in a saucepan with a few sprigs fresh thyme. Heat until the sugar dissolves, then cover and refrigerate until needed.
