Note: These roasted soybeans are delicious eaten as is for a snack, or sprinkle them over salads for added crunch.
  • 1 cup fresh soybean pods
  • 1 tablespoon soybean or other oil
  • Salt

Step 1Toss soybeans with oil on baking sheet. Roast at 375 degrees, stirring occasionally, until beans begin to brown lightly, 20 to 25 minutes. Remove from oven; season with salt. Cool on tray lined with paper towels.

Each tablespoon:
31 calories; 21 mg sodium; 0 cholesterol; 2 grams fat; 2 grams carbohydrates; 2 grams protein; 0.33 gram fiber.
