  • 1 jalapeno chile, seeded and deveined
  • 1/3 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1 cup roasted unsalted pepitas (pumpkin seeds)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons cream cheese
  • 1/2 cup heavy cream
  • 2 tablespoons lime juice
  • Tortilla chips

Step 1In a food processor, mix the chile, onion, cilantro, pepitas, salt, pepper, cream cheese, heavy cream and lime juice to make a thick, smooth paste. Taste; check seasonings. Serve with tortilla chips.

Each serving:
168 calories; 5 grams protein; 5 grams carbohydrates; 1 gram fiber; 15 grams fat; 6 grams saturated fat; 26 mg. cholesterol; 171 mg. sodium.
