Step 1Place a rinsed highball glass in the freezer to chill (rinse the glass, then dry just the bottom before placing it in the freezer so that you get a thin layer of frosty ice all around the glass). Just before mixing the cocktail, remove the glass from the freezer and fill with crushed ice.
Step 2Combine the bourbon, St-Germain, lime juice, simple syrup and apple juice in a cocktail shaker with ice. Shake to combine, then strain into the highball glass.
Step 3Garnish the drink with a fan of thinly sliced apple and a mint sprig. Serve immediately
