Perfectly ripe peaches and nectarines will have a slight give to their texture, but both will continue to ripen after they’ve been picked, so don’t worry if your fruit is a little firm. But don’t refrigerate them until they’ve softened and become fragrant.
Peaches should be peeled before cooking – cut an “X” in the flower end and blanch them in boiling water until the peel starts to come away. Stop the cooking in an ice water bath and peel with your fingers. Nectarines don’t need to be peeled.
