Total time: 15 minutes | Serves 4
  • 1 bunch mint
  • 4 litchis (canned in syrup if fresh is not available)
  • 6 ounces fresh pressed apple juice from Granny Smiths (or substitute refrigerated, flash-pasteurized juice plus 1 teaspoon lemon juice per 8 ounces)
  • 8 ounces premium vodka

Step 1Wash the mint and set aside four sprigs for garnish. In a cocktail shaker, muddle about 14 mint sprigs and 2 of the litchis with 3 ounces of the apple juice and 4 ounces of the vodka.

Step 2Add ice and shake until chilled. Strain into two ice-filled glasses and garnish with fresh mint. Repeat with the remaining mint, litchis, apple juice and vodka to make two more cocktails.

Note: From David Myers, executive chef and owner of Sona restaurant. Evolution brand refrigerated flash-pasteurized apple juice is available at certain grocery stores and specialty stores.
