- 1 tablespoon butter
- 1/4 cup chopped red onion
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped red bell pepper
- 1 cup rice
- 1 cup vegetable or chicken broth
- 1 cup water
Step 1Melt butter in medium saucepan over medium-high heat. Add onion, green and red peppers and cook, stirring until slightly softened, about 3 to 4 minutes. Add rice, broth and water. Bring to boil, then reduce heat to low, cover and simmer until liquid is absorbed and rice is tender, about 15 minutes.
