French Toast Cubes
Luis Sinco / Los Angeles Times

Usually French toast is made with large pieces of bread, sometimes cut thick and sometimes cut thin. But with this variation--the bread is cut into cubes--you can eat as many or as few bites as you like. That--and the use ... Read more

Total time: 30 minutes | Serves 4
  • 1 (1-pound) loaf French bread
  • 1 1/4 cups nonfat egg substitute
  • 1 1/4 cups nonfat milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon granulated sugar
  • Nonstick cooking spray
  • Powdered sugar, for topping
  • Cinnamon, for topping

Step 1Heat the oven to 375 degrees. Remove the outer crust from the French bread with a serrated knife. Cut the bread crosswise into 1-inch slices. Cut each slice into 6 cubes.

Step 2Combine the egg substitute, milk, vanilla and granulated sugar in a shallow glass baking dish. Place the bread cubes, a few at a time, into the egg batter and turn to coat all sides. Let the bread stand in the egg mixture about 10 minutes.

Step 3Spray a large nonstick skillet with cooking spray. Heat the skillet over medium-low heat until hot. Lift the bread cubes out of the egg mixture, letting the excess drip back into the dish. Working in batches, place the cubes in the skillet so they are not touching and cook, turning to brown all sides, about 5 minutes. Remove the cubes to a large shallow baking pan.

Step 4When all the bread has been browned, bake until the cubes are puffed and the center is cooked through, about 10 minutes.

Step 5Serve the bread cubes warm, sprinkled with powdered sugar and cinnamon to taste. Garnish with a few slices of banana or other fruits of your choice.
