  • 2 very ripe plantains
  • Oil, for frying

Step 1Slice plantains on slight diagonal into 1/2-inch slices.

Step 2Heat oil in medium skillet over medium heat. Add plantain slices and fry until browned, about 3 to 4 minutes a side.

Each serving:
150 calories; 4 mg sodium; 0 cholesterol; 7 grams fat; 24 grams carbohydrates; 1 gram protein; 0.39 gram fiber.
