Thai Sweet Chili Sauce
- 1 cup granulated sugar
- ⅓ cup distilled white vinegar
- 3 tablespoons sambal oelek (ground fresh chili paste)
- 2 large garlic cloves, finely chopped
- ½ teaspoon kosher salt
Step 1Combine the sugar, vinegar, sambal, garlic and salt in a small saucepan. Bring to a boil over medium-high heat, stirring to dissolve the sugar. Reduce the heat to medium and simmer rapidly, stirring occasionally, until syrupy in consistency, about 10 minutes. Cool to room temperature and serve.
