Note: From David Lentz at Hungry Cat restaurant. During tomato season, use the best ripe tomatoes you can find. Out of season (during winter and spring) use Roma tomatoes. Fresno peppers are available at farmers markets and select Whole Foods markets.
  • 2 1/2 pounds tomatoes, trimmed and quartered
  • 8 large pimento-stuffed green olives
  • 2 Fresno peppers or red jalapeno peppers, grilled over gas flame
  • Juice of 2 lemons
  • Juice of 2 limes
  • 3 tablespoons Worcestershire sauce
  • 1 heaping tablespoon prepared horseradish
  • 1/2 teaspoon freshly ground black pepper
  • 8 dashes Tabasco
  • Pinch of kosher salt

Step 1Puree the tomato quarters in a blender in batches. Pour through a sieve into a large pitcher. Discard the seeds. You should have 4 cups tomato juice. Set aside.

Step 2Place the olives, peppers, lemon and lime juice, Worcestershire, horseradish, pepper, Tabasco and salt in a blender and puree until smooth.

Step 3 Add the tomato juice and blend.
