Total time: 50 minutes | Serves 8
  • 12 slices bacon, diced
  • 1 cup grated Swiss cheese
  • 1/3 cup chopped onion
  • 1/2 cup buttermilk baking mix
  • 1 cup milk
  • 1/8 teaspoon pepper
  • 2 eggs

Step 1Heat the oven to 400 degrees. Grease a 9-inch pie plate.

Step 2Cook the bacon in a medium skillet over medium heat until cooked through and crispy, stirring often, about 10 minutes. Drain on paper towels.

Step 3Sprinkle the bacon, cheese and onion in the pie plate. In a bowl, whisk together the baking mix, milk, pepper and eggs. Pour into the pie plate.

Step 4Bake the pie until a knife inserted in the center comes out clean, 35 to 40 minutes. Cool for 5 minutes before cutting into wedges.

Each of 8 servings:
214 calories; 390 mg sodium; 83 mg cholesterol; 15 grams fat; 7 grams saturated fat; 7 grams carbohydrates; 12 grams protein; 0.28 gram fiber.
