Total time: 5 minutes | Serves 2
  • 1 cup nonfat milk
  • 1/4 (14-ounce) carton soft tofu
  • 1 tablespoon instant espresso powder
  • 2 tablespoons cocoa
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon almond extract
  • 1/2 cup ice cubes

Step 1Mix milk, tofu, espresso powder, cocoa, sugar, vanilla and almond extract in a blender until smooth. Add ice cubes and blend again to chop fine. Serve cold.

Each serving:
200 calories; 70 mg sodium; 2 mg cholesterol; 3 grams fat; 37 grams carbohydrates; 10 grams protein; 1.98 grams fiber.
