Serves 1
  • 1½ ounces medium Amaro, such as China-China Amer or Averna
  • 1 ounce sweet vermouth
  • ¼ ounce 1:1 simple syrup*
  • 1 large egg
  • 1 maraschino cherry

Step 1In a cocktail shaker, combine the Amaro, sweet vermouth, simple syrup and egg. Cover and shake vigorously without ice for 20 seconds. Add the ice, cover and shake again for 30 seconds. Place a cherry in the bottom of a chilled coupe, small wine or tulip glass and strain the cocktail through a fine mesh sieve overtop. Serve immediately.

Note: * To make simple syrup, combine equal parts sugar (brown or granulated) and water. Heat in a saucepan over medium-low heat just to dissolve the sugar.
