Total time: 20 minutes plus 2 hours chilling | Serves 6
  • 1 pound bacon
  • 2 pounds broccoli florets, cut in bite-size pieces
  • 3 stalks celery, chopped
  • 1 cup raisins
  • 1 cup mayonnaise or mayonnaise salad dressing
  • 2 tablespoons vinegar
  • 1/4 cup sugar
  • 1/4 cup half-and-half

Step 1Fry bacon in large skillet until crisp, 10 minutes. Drain on paper towels, then crumble.

Step 2Combine broccoli, celery, bacon and raisins in a large bowl.

Step 3Combine mayonnaise, vinegar, sugar and half-and-half in small bowl. Add to broccoli mixture. Toss to coat. Refrigerate at least 2 hours before serving.

Each of 8 servings:
481 calories; 569 mg sodium; 39 mg cholesterol; 36 grams fat; 37 grams carbohydrates; 8 grams protein; 1.64 grams fiber.
