Total tiime: 10 minutes plus 2 hours chilling | Makes 1 1/2 cups
Note: From Mako Antonishek at Le Colonial, this is a colorful addition to Vietnamese sandwiches of pork pate or pork meatloaf.
  • 1 cup thinly sliced carrots
  • 1 cup thinly sliced daikon
  • 1 tablespoon coarse salt
  • 2 tablespoons sugar
  • 1/4 cup vinegar
  • 2 tablespoons water

Step 1Combine carrots, daikon, salt, sugar, vinegar and water in small bowl. Cover and chill 2 hours.

Each 1/4 cup:
13 calories; 597 mg sodium; 0 cholesterol; 0 fat; 3 grams carbohydrates; 0 protein; 0.22 gram fiber.
