Pumpkin face quesadillas

Pumpkin face quesadillas

Total time: 15 minutes | Serves 4 quesadillas
  • 8 flour tortillas
  • 1/2 cup canned refried black beans
  • 2 cups grated Cheddar cheese

Step 1Cut pumpkin shape out of each tortilla with 6-inch pumpkin-shaped cookie cutter.

Step 2Place 4 pumpkin-shaped tortillas on baking sheet. Spread 2 tablespoons refried beans on each cutout. Sprinkle with grated cheese. Top each with remaining pumpkin cutouts to make sandwich.

Step 3Using butter knife or bottle caps. (if kids are helping), cut pumpkin eyes and mouth out of top of each quesadilla.

Step 4Bake at 300 degrees until cheese melts, 3 to 4 minutes.
