  • 1 (14-ounce) can unsweetened coconut milk
  • 1 1/2 cups water
  • 1 teaspoon salt
  • 1 cup rice

Step 1Shake the coconut milk before opening. Stir the coconut milk, water and salt together in a 3-to 4-quart saucepan and bring to a boil over high heat. Stir in the rice and return to a boil, stirring constantly. Cover, reduce the heat to low, and cook until the rice is tender and the moisture is absorbed, about 20 minutes, stirring frequently.

304 calories; 603 mg sodium; 0 cholesterol; 18 grams fat; 16 grams saturated fat; 33 grams carbohydrates; 4 grams protein; 1.03 grams fiber.
