Total time: 20 minutes | Serves 4
  • 1 tablespoon butter
  • 1/4 cup pine nuts
  • 2 cups water or chicken broth
  • 1 cup rice

Step 1Melt butter in a saucepan over medium heat. Add pine nuts and cook, stirring, until golden, about 3 minutes. Remove nuts and set aside.

Step 2Add water to pan and bring to boil. Add rice, reduce heat to low and simmer, covered, until done, about 15 minutes.

Each serving:
210 calories; 30 mg sodium; 8 mg cholesterol; 8 grams fat; 31 grams carbohydrates; 5 grams protein; 0.08 gram fiber.
