Active work and total preparation time: 15 minutes | Serves 4
  • 2 tablespoons oil
  • 1/2 cup finely chopped onion
  • 2 teaspoons minced ginger root
  • 1 pound mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar

Step 1Heat the oil in a nonstick skillet over medium-high heat. Add the onion and ginger root and cook until the onion is tender, 2 to 3 minutes. Raise the heat to high, add the mushrooms and cook until they start to soften, about 2 to 3 minutes. Add the soy sauce and sugar and cook, stirring, until the mushrooms are tender, 5 to 6 minutes.

Each serving:
106 calories; 508 mg sodium; 0 cholesterol; 7 grams fat; 1 gram saturated fat; 8 grams carbohydrates; 4 grams protein; 1.81 grams fiber.
